The egg clouds are a simple idea for a savory breakfast to accompany other preparations like small puff pastry bites with bacon, various cold cuts, and cheeses for a rich and international breakfast or for a brunch with friends and family.

I baked the clouds in the oven, but if you prefer, you can do it in a non-stick pan and cook the yolk to your personal taste.

To make this basic recipe more appetizing, I added some bacon and a few sprigs of chives…

Ingredients for EGG CLOUDS RECIPE

  • 2 eggs
  • 1 tbsp diced bacon (regular or smoked as preferred)
  • to taste chives
  • 2 pinches salt

Tools for EGG CLOUDS RECIPE

  • Electric whisk
  • Bowl
  • Baking dish
  • Parchment paper

FOR THE PREPARATION OF THE EGG CLOUDS RECIPE

  • In a bowl, whip only the egg whites to soft peaks, keeping the 2 yolks on a small plate.

    I NEVER add salt when doing this because after reading Dario Bressanini’s book and the article I share with you, I know they are MYTHS….

  • Preheat the oven to 340°F and prepare the baking dish for cooking.

    Line the baking pan with parchment paper and arrange the whipped egg white mixture in a circle, dividing it into 2 portions.

    Gently let each yolk fall in the center of the little cloud.

  • On top of each yolk, put some diced bacon, a few small sprigs of chives, and a pinch of fine salt.

  • Bake the eggs for 5-6 minutes or according to your taste and your appliance.

    Simple and pleasant, the egg clouds are a tasty idea for a savory, delightful breakfast!
