Ingredients for DELICIOUS CAKE WITH COCONUT AND PINEAPPLE

  • 4 medium eggs (for the sponge cake)
  • 3/4 cup Sugar
  • 1 1/3 cup All-purpose flour
  • 1 organic lemon (zest grated or vanilla)
  • 3/4 cup pineapple yogurt
  • 1/2 cup ricotta cheese
  • 1 1/4 cup whipped cream
  • 2/3 cup powdered sugar
  • 1 organic lemon (zest grated)
  • 1 1/2 lbs fresh pineapple (sliced)
  • 1 cup fresh coconut
  • 1/4 cup pineapple juice
  • 1 tsp Sugar
  • to taste mint

PREPARATION OF THE DELICIOUS CAKE WITH COCONUT AND PINEAPPLE RECIPE

  • For the Sponge Cake whisk the eggs with sugar in a bowl using an electric mixer until the mixture is ribbon-like, meaning it drips from the beaters in a continuous ribbon that sits on top of the rest of the batter.

  • Flavor the mixture with the zest of the grated lemon then gently fold in the sifted flour.

    Pour the mixture into the buttered and floured mold and bake at 356°F for about 35/40 minutes or according to the characteristics of your oven.

  • Once cooked, remove the cake from the mold and cool it on a wire rack if possible.

    For the soaking syrup put the pineapple juice and sugar in a saucepan and simmer for a few minutes, then let it cool.

  • For the filling, mix the sifted ricotta with the sugar.

    Then add the yogurt and the grated zest of the organic lemon.

    Finish by folding in the whipped cream to combine the filling.

  • Assemble the delicious cake with coconut and pineapple by leveling the cake surface (if needed), cutting it in half, and moistening one part with the cooled soaking syrup.

  • Make a first layer of filling, add some thinly sliced fresh coconut (cut with a mandoline) and thin pineapple slices. Cover the filling with the second part of the sponge cake.

  • Cover the entire cake with the remaining filling and decorate with coconut and pineapple along with a few fresh mint leaves. What do you think??
