Quick Sandwich Pockets

Quick sandwich pockets are a tasty appetizer ready in a few minutes, which you can fill with whatever pleases you and whatever you have in the fridge! Personally, I used diced smoked mozzarella, some fresh cherry tomatoes, slices of cooked ham alternating the filling ingredients.

I bought crustless sandwich bread slices slightly larger than usual because these are squares of about 4 inches on each side.

It only takes a few minutes in the oven, which I used on grill mode because it takes very little for the bread to form a slight and crispy crust, making this a delightful appetizer definitely worth repeating with different fillings!

  • 1 sandwich bread 4 x 4 inches
  • as needed smoked mozzarella
  • as needed cherry tomatoes
  • as needed cooked ham
  • as needed salt

FOR THE PREPARATION OF QUICK SANDWICH POCKETS

  • Take the slices of sandwich bread

    and place them on a work surface.
    Flatten them slightly with the help of a rolling pin, reducing the thickness of the
    bread.

  • From one of these slices of bread, using the bottom of a pastry nozzle (or a small shot glass or other), make small circles that will be used to close the quick sandwich pocket.

  • Start filling these appetizers by placing your chosen filling in the center of the flattened square of toast bread, then bring the corners towards the center and seal the pocket with a small circle of bread as I did and as seen in the photo.

  • Cover the baking sheet with parchment paper, arrange the pockets, and put them under the grill for just a few seconds until they become slightly golden and crispy!

  • If you prefer, do a regular bake at 375 degrees F for 5/6 minutes and as soon as they’re warm, serve these tasty quick sandwich pockets! Enjoy your meal and bye! Annalisa

Tips and Notes

PERSONALLY, pressing gently with the circle of bread was enough to close the pocket, but if you worry it might open during cooking, use a tiny drop of water before sealing the appetizer…
