- 1 roll shortcrust pastry
- 10.5 oz Delica pumpkin
- Half golden onion
- 10 leaves black kale
- 5 oz Taleggio
- 1.75 oz ricotta
- 1.05 oz grated Parmesan
- 2 sprigs rosemary
- to taste extra virgin olive oil
- to taste salt
- to taste black pepper

Recipe for the Savory Pie with Pumpkin, Taleggio, and Black Kale
Start preparing the savory pie with pumpkin, Taleggio, and black kale by heating extra virgin olive oil in a pan with two sprigs of rosemary.
Clean half an onion and slice it.
Peel and chop the Delica pumpkin.
Place both in the pan and cook for 10 minutes, adding water as needed.
After 10 minutes, add the cleaned and chopped black kale and cook for another 10 minutes.
Turn off the heat and season everything with salt and black pepper.
Add the Parmesan and ricotta and mix well.
Finish with 3.5 oz of Taleggio and set aside.
Roll out the shortcrust pastry on a round baking dish about 12 inches. Fold the edges and prick the base, then cover everything with dry legumes or the special ceramic weights.
Bake in a static oven at 375°F for 30 minutes.
Take the shortcrust out of the oven and remove the weights, being careful not to burn yourself.
Pour in the filling and distribute it well.
Add the remaining Taleggio by breaking it with your hands.
Put the savory pie back in the oven at the same temperature as before for another 10 minutes, just enough time for the Taleggio to melt.
Take it out of the oven, let it cool slightly, and then serve the savory pie with pumpkin, Taleggio, and black kale.
