- 1 roasted red bell pepper
- 1/2 red onion (chopped)
- 30 g desalted capers
- 30 g pine nuts
- 50 ml extra virgin olive oil
- q.s. salt
- 50 g yellow cherry tomatoes (+ 50 grams)
- 50 g blanched almonds
- 30 g pecorino cheese (grated)
- 2 pinches oregano
- q.s. salt
- 1 large zucchini
- 1 clove garlic
- q.s. extra virgin olive oil
- q.s. basil and parsley
- 50 g pine nuts
- 40 g Grana Padano cheese (grated)
- q.s. salt and pepper

FOR THE PREPARATION OF THE RECIPES OF 3 PESTOS FOR TASTY MAIN COURSES
For the red bell pepper pesto, put the roasted vegetable in a blender with the red onion, desalted capers, a bunch of parsley, and the pine nuts.
Pulse the blades intermittently adding the EVO oil until you get a creamy mixture.
Mix well and adjust the saltiness.
For the yellow cherry tomato pesto, coarsely chop about 50 grams after removing the seeds and juice.
Also add the blanched almonds and grated pecorino cheese.
Adjust the salt and add the oregano.
Pour the mixture into the blender adding the extra virgin olive oil until you obtain a creamy pesto.
Also cut 50 grams of yellow cherry tomatoes and add them to the already prepared pesto.
For the zucchini pesto, trim and wash the vegetable then cut it into slices.
Heat a little oil in a pan and brown the garlic, adding the zucchini.
Also add the chopped parsley and cook until done then let everything cool.
Put the cooked zucchini in the blender with the pine nuts, herbs, and cheese.
Pour the EVO oil in a stream until you obtain a homogeneous sauce.
Adjust with salt and pepper.
