Coconut Ice Cream

Ingredients for COCONUT ICE CREAM WITH RAFFAELLO WITHOUT ICE CREAM MAKER

  • 1 3/4 cups coconut beverage (I used AdeZ)
  • 3/4 cups vegetable cream (I used Hoplà)
  • 1/2 cup granulated sugar
  • 2 oz coconut flour
  • 8 Raffaello (crumbled)

PREPARATION FOR COCONUT ICE CREAM WITH RAFFAELLO WITHOUT ICE CREAM MAKER

  • In a saucepan

    add the coconut-flavored beverage, the cream, and the granulated sugar.

  • Over medium heat warm the mixture, stirring to dissolve the sugar completely.

  • Off the heat, add the coconut flour and let it cool.

    Roughly crumble the Raffaello bonbons with coconut and add them to the mixture, mixing everything together.

  • When the mixture is cold, place it in the freezer and stir it every 30 minutes or so until it reaches the right consistency.

  • With the appropriate tool, portion it out, sprinkle with more COCONUT and serve.

As you can see, my scoops turned out really ugly, but the ice cream is very good so…
If you want it even more indulgent, melt a piece of dark chocolate or some Nutella and drizzle a little on top…. mmmmmmmhhhhhhh delicious!!!!
