Short on time but craving a quick zucchini and bacon flatbread, so… off to the kitchen to julienne the vegetables julienne and dice the bacon.
I added the ingredients to the dough raw and then added flour and a few liquids to mix everything well.
The quick result was devoured in no time by me and my son because it’s very tasty!

QUICK ZUCCHINI AND BACON FLATBREAD

INGREDIENTS
- 12.3 oz zucchini
- 3.5 oz diced bacon
- 3.5 oz All-purpose flour
- 4 medium eggs
- 1.2 oz Grana Padano cheese (grated)
- 2 tbsps extra virgin olive oil
- 1 cup Milk
- 2 tsps instant yeast for savory (I use Pizzaiolo)
- q.b. salt and pepper

FOR THE PREPARATION OF THE QUICK ZUCCHINI AND BACON FLATBREAD RECIPE
Wash and trim the zucchini
and julienne them, allowing them to drain from their vegetation water in a colander.
Preheat the oven to 350°F.Oil and coat a baking tray of 10 x 7 inches with breadcrumbs.
After some time, squeeze and pat the grated zucchini dry and place them in a bowl.
Now add the previously beaten eggs, flour, the GRANA cheese, and the bacon, whether sweet or smoked, as you like.
Mix well to combine everything, adjusting for salt and pepper.
Pour everything into the previously oiled and breadcrumb-coated baking tray and bake for about 35/40 minutes or according to your appliance’s features.
Once cooked, let it cool, cut it into slices, and serve the quick zucchini and BACON flatbread!
