TUNA STUFFED PEPPER ROLLS – Quick, Light, and Flavorful

The Tuna Stuffed Pepper Rolls are a very simple recipe, almost basic, but they are very delicious and extremely appetizing!

The delicious grilled tuna stuffed pepper rolls are atasty appetizer to prepare in advance, perfect even for the upcoming summer months… yes, summer will eventually come even though we will remember this month of May as cold, humid, and definitely frustrating!!!

The recipe for pepper and tuna stuffed rolls is very versatile, almost a fridge cleaner because you can also add sun-dried tomatoes in oil, desalted capers, olives… basically, the breadcrumbs and tuna filling lends itself to more delicious additions!!
And if you prefer, having little time, you can use already grilled frozen peppers!

FILLING VARIATIONS FOR THE PEPPER ROLLS all tasty and easy!

1. Ricotta and Herbs
– cow or sheep ricotta
– parsley, basil, thyme, or even mint
– salt, pepper, and lemon zest
– grated Parmesan cheese optional

2. Couscous and Mixed Vegetables
– already cooked couscous
– zucchini, carrots, onions stir-fried diced
– olive oil, lemon juice, fresh mint

3. Chickpeas and Greek Yogurt
– boiled chickpeas mashed with a fork
– Greek yogurt to bind everything
– paprika, cumin, or parsley
– capers and olives optional

4. Feta and Sun-Dried Tomatoes
– crumbled feta
– finely chopped sun-dried tomatoes
– oregano, black olives, and a little olive oil

5. Millet and Zucchini
– boiled millet
– julienned zucchini quickly stir-fried
– mint and pepper and nutritional yeast flakes(it’s similar to Parmesan cheese, doesn’t leaven, and is often used to flavor dishes without adding dairy).

Ingredients for TUNA STUFFED PEPPER ROLLS RECIPE

  • 4 peppers (yellow or red)
  • 8.8 oz Canned Tuna
  • 1 shallot
  • 2.8 oz breadcrumbs
  • 2 tablespoons Parmesan cheese (grated)
  • basil and parsley
  • 1 tablespoon Extra virgin olive oil
  • to taste salt and pepper

FOR THE PREPARATION OF THE TUNA STUFFED PEPPER ROLLS RECIPE

  • Bake the washed and whole peppers for about 40/45 minutes, turning them halfway for even cooking. Remove them from the oven, wrap them in parchment paper, and let them rest for 10/15 minutes.

  • Peel them, remove the seeds and inner filaments, and cut each into 4 pieces.

    Chop half a shallot and stew it with a little water in a small pan for a few minutes and 1 tablespoon of olive oil.

  • In another pan, toast the breadcrumbs on high heat, stirring often to avoid over-browning.

    To finish the tuna stuffed pepper rolls recipe, add the shallot and the drained and flaked tuna with a fork.

  • Then add to the mixture the grated cheese and mixed aromatic herbs chopped with a knife.

    If you want to make a variation, now is the time to add chopped capers or olives or chopped sun-dried tomatoes

  • Place a little filling in each pepper piece and roll it up like a roll.

    Secure each with a toothpick and season with salt and pepper.

  • They would already be great like this, but after arranging them regularly on a tray lined with parchment paper, bake them in a preheated oven at 428°F for 5 minutes.

    Serve them hot or cold as you prefer… the tuna stuffed pepper rolls are DELICIOUSSSSSSS ^_^!

Tips and Notes

I really like peppers prepared this way, grilled or baked with a breadcrumb topping that I often change by adding capers, anchovies, sun-dried tomatoes to always have a very appetizing dish that with a slice of cheese, two hard-boiled eggs, a salad… becomes a tasty lunch or dinner even in summer!
