The Delicious Cake is, needless to say, a delicious sweet preparation from Modena with honey and walnuts and chocolate, a dessert suitable for the cold winter months since it cannot be defined as dietetic ^_^.
While browsing the web, I discovered that this specialty is named after the statue placed at the corner of the Modena Town Hall and is composed of two parts: a head made of Greek marble and a body made of crystalline limestone.
It probably represented honesty in commerce (“Bonissima” from “Bona Esma” (Estimate/Measure) – from the name of the “good measure” palace), supported by the fact that it once held a scale and stood on a base engraved with different units of measure.
The statue thus took its name from its position and, over time, assumed its current designation of Bonissima (Bunéssma in the local dialect). In the city, the word is still synonymous with a curious, gossiping, and well-known person, just like the statue that from its vantage point in the square can see and oversee everything that happens.
The most widespread legend claims that it was a wealthy lady who, during a famine, fed the people by asking for help from other city notables; when the famine ended, she celebrated with the entire population in her palace, expelling only those who did not assist her in her good deed.
This legend was reinforced by the identification, according to the people, of a purse in what is a fold of the dress.(from Wikipedia). But let’s head to the kitchen to prepare the recipe for this excellent dessert… the Delicious Cake!

- 2 1/2 cups All-purpose Flour
- 1 egg
- 1 egg yolk
- 2 tbsps Sugar
- 3/4 cup chopped walnut kernels
- 1/2 cup soft butter
- 3/4 cup wildflower honey
- 2 tbsps rum
- 1 grated lemon zest
- 1/2 tsp baking powder
- 1 pinch fine salt
- as needed butter and flour (for the pan)
- 2 tbsps rum
- 2 tbsps water
- 5 oz dark chocolate
- as needed chopped walnut kernels

Preparation RECIPE THE DELICIOUS CAKE
In a bowl, mix with your fingers the soft butter with the sugar, the grated lemon zest, and a pinch of salt, kneading quickly. Add now the egg yolk and whole egg, and then the sifted flour with the baking powder.
Make a nice dough and place it in the fridge for about 30 minutes.
Preheat the oven to 350°F and butter and flour the pan about 8-9 inches.
Roll out the dough to a thickness of about 1/8 inch and line the pan, pricking it with the tines of a fork.
Mix the chopped walnut kernels roughly with the fluid honey and rum and pour it over the dough, trying to level everything well… If necessary, use a spatula dipped in water.
Now close the Delicious Cake with another disc of dough, perfectly sealing the two discs of mixture.
Prick the cake called Delicious (I used a skewer for a gentler touch) and bake it for about 40 minutes: it should become evenly golden!
Let it cool completely out of the oven and start preparing the dark chocolate covering.
Melt the chocolate in a double boiler with the rum and water, always stirring to obtain a smooth and shiny glaze.
When warm, spread it over the Delicious Cake starting from the center and distributing it over the whole surface, using the back of a wet spoon.
Garnish with more walnut kernels if desired and let it rest until the glaze has dried.
It’s the perfect cake for these cold and foggy winter days, and with that chocolate glaze then… fantastic!!!
