Potato Tarte Tatin today, a savory pie named after the famous Tatin sisters who, due to a mistake while making a dessert, created a pie that will forever remind us of their delicious creation!
A tip: don’t add cubes of cold cuts (bacon, prosciutto, or speck as in my case) because during cooking some will become too crispy… goodness gracious I almost chipped my incisor, ha ha!

POTATO TARTE TATIN

INGREDIENTS FOR POTATO TARTE TATIN RECIPE
- 1 sheet ready puff pastry
- 4 Potatoes
- 2.8 oz speck
- to taste rosemary
- to taste Butter
- to taste salt and pepper
FOR THE PREPARATION OF THE POTATO TARTE TATIN RECIPE
Wash the potatoes
and slice them thinly with a mandoline.
Butter a pan of 8 x 8 in and distribute some fresh rosemary sprigs and the speck or cold cut cubes (heh heh…) on the bottom.Then add the potato slices, overlapping them and covering the entire bottom of the pan. Unroll the ready puff pastry and cut out a square slightly larger than the pan’s dimensions.
Now lay the ready puff pastry over the overlapped potato slices creating a small edge along the perimeter and prick it here and there with a wooden skewer.
Bake in a preheated oven at 392°F and cook the Potato Tarte Tatin for about 20/25 minutes or according to your oven’s specifications.
Once cooked, turn it over onto a plate, then, when just warm, cut it into squares (for me 9 in total) and serve it at the table. Enjoy your meal with Potato Tarte Tatin with speck and rosemary!

I WANTED TO REMIND YOU that rosemary is not only an aromatic herb with a distinctive taste but is also great for keeping away those little insects called by their color silverfish, which are so fond of paper and may be found in our library! To ward off this pesky insect, make small tulle bags with rosemary sprigs, cloves, and mint inside, leaving them among books and notes!
