Stir-Fried Cotechino with Artichokes and Potatoes, a simple, tasty one-pot meal perfect for the upcoming Christmas holidays!

Supermarkets are bustling (Esselunga was packed with customers two days ago); it seems like families just started dining, excuse the mess!

I personally went to Lidl on Via Larga yesterday around 1:30 PM and was lucky: there were just a few of us happily taking the time to carefully choose fruits and veggies! The dish is quite simple but the result is tasty and I highly recommend it!

BEFORE COOKING it is recommended to soak the sausages in water for at least one night: cotechino, zampone, and cappello del prete should be pierced with a skewer; they should be peeled and sliced only after cooking.

If fresh, these particular products need to be cooked for a long time from 2 to 4 hours depending on size, and care must be taken not to break the casing so the contents don’t spill out.

SALAMA DA SUGO has a unique cooking method because after soaking it is hung on a wooden spoon or a stick and placed in the pot so that the sausage DOES NOT TOUCH the bottom of the pan. It is then left to simmer for about 4/5 hours depending on weight and aging.

Ingredients: STIR-FRIED COTECHINO WITH ARTICHOKES AND POTATOES

  • 4 artichokes
  • 1.1 lbs Cooked Cotechino
  • 1 onion
  • 1.1 lbs Potatoes
  • 1 lemon
  • to taste extra virgin olive oil
  • to taste parsley
  • to taste salt and pepper

Preparation

  • Cook the cotechino according to the package instructions.

    Cook the washed potatoes for about 20/25 minutes.

  • Peel them warm and cut into even chunks.

    Remove the outer leaves of the artichokes, cut them in half and remove the internal fluff

  • In a pan or wok, put the chopped onion with a little oil and when it sizzles, add the drained artichoke wedges and cook for 10 minutes adding half a glass of water.

    Then add the potato chunks, stirring everything and continuing to cook for about 10 minutes.

  • Adjust salt and pepper considering that the cotechino is savory.

    Slice the cotechino and add it to the vegetable preparation already in the pan, letting the ingredients blend together for about 4/5 minutes.

  • Then add chopped parsley and serve the stir-fried cotechino with artichokes and potatoes at the table!
