Artichoke Caponata

Artichoke Caponata is a rich and flavorful side dish that I enjoyed greatly at lunch with friends.

Caponata is a typical Sicilian side dish made with a mix of vegetables, primarily eggplants, seasoned with olives, capers, celery, onion, and tomato sauce.

The uniqueness of the dish is the addition of vinegar and sugar that give a very pleasant sweet and sour aroma. The dish is also perfect at room temperature, great as an appetizer accompanied by golden bread for super appetizing bruschetta!

Ingredients for ARTICHOKE CAPONATA RECIPE

  • 6 artichokes
  • 2 stalks celery
  • 1 medium onion
  • 200 ml Tomato sauce
  • 1 tbsp capers
  • 3.5 oz black olives
  • 2 tbsps pine nuts
  • 1.75 oz white wine vinegar
  • 2 tsps Sugar
  • 1 lemon
  • to taste Extra virgin olive oil
  • to taste Salt and pepper

FOR THE PREPARATION OF ARTICHOKE CAPONATA RECIPE

  • Clean the artichokes and put them in a bowl with water acidulated with lemon juice to prevent browning. Cut them into wedges.

  • In a pan with a little oil, sauté them, add a ladle of water, and finish cooking.

    Set them aside and proceed to complete the artichoke caponata recipe.

  • Clean the celery stalks by removing the strings and cutting them into small pieces.

    In the same pan, pour in the sliced celery with a splash of water and cook on a moderate flame.

  • Then add the chopped onion, capers, black olives, and tomato sauce.

    Cook on low heat, adjusting salt and pepper.

    Before turning off the heat, add the vinegar and sugar.

  • Finally, add the artichoke wedges and pine nuts, mixing the caponata well. Serve at the table and enjoy your meal!
