Sweet-and-Sour Artichoke Caponata

Artichoke Caponata — today a side dish rich in flavor, really delicious that I enjoyed a lot at lunch with friends.

The caponata is a typical Sicilian side dish made with a mixture of vegetables — especially eggplants — seasoned with olives, capers, celery, onion and tomato sauce.

The peculiarity of the dish is the addition of vinegar and sugar which give a very pleasant sweet-and-sour aroma. The dish is perfect even at room temperature, and is also great as an appetizer served with toasted bread for very appetizing bruschette!
