No-bake nougat cream to fill a panettone or pandoro as we are quickly approaching December, but also delicious for filling a birthday cake, a sponge cake, or another joyful family gathering.

The nougat is a typical Christmas food made with egg white, honey, and sugar with the addition of dried fruits like almonds, hazelnuts, walnuts, and peanuts.

It is a very ancient food with traces dating back to Roman times as some writings of Livy suggest. It is said that the nougat we find on our tables originated from a dessert served on October 25, 1441, in Cremona at the wedding menu of Francesco Sforza and Bianca Maria Visconti.

The tower-like shape seems to mimic the bell tower of Cremona Cathedral (Torrione) and subsequently took its name. The city of Cremona is still today one of the most important nougat production centers in all of Italy.

Nougat is very caloric, for example, the almond version has 479 calories per 100 grams, so it is necessary to eat it in limited quantities, be careful

  • 8.8 oz Mascarpone
  • 3/4 cup Heavy cream
  • 5.3 oz Nougat
  • 2 tbsps Acacia honey (optional)

No-Bake Nougat Cream Recipe Preparation

  • To prepare this delicious spoonable nougat cream first beat the mascarpone with the electric whisk to soften it and make it creamy.

  • Add the whipped cream with gentle movements, mixing the two mixtures, and finally add the nougat chopped with a knife quite finely (do not crush it completely and leave some larger pieces).

  • Store the no-bake nougat cream in the refrigerator for at least an hour before using it in other kitchen preparations.

  • If you prefer a sweeter cream, add acacia honey; personally, I did not add it because for me the nougat is already sufficiently sweet. Enjoy the no-bake nougat cream!
