UMBRIAN STUFFED TOMATOES

Ingredients for UMBRIAN STUFFED TOMATOES RECIPE
- 4 tomatoes (firm and ripe)
- 2.5 oz breadcrumbs
- 2 medium eggs
- 1 clove garlic
- 1 bunch Parsley (chopped)
- 2 tbsp tomato sauce (optional)
- to taste Extra virgin olive oil
- to taste Salt and pepper

FOR THE PREPARATION OF THE UMBRIAN STUFFED TOMATOES RECIPE
Wash, dry, then cut in half the ripe and firm tomatoes, empty them and salt them inside, placing them upside down to rest for about 20 minutes to lose their vegetable water.
This precaution is necessary every time we want to prepare recipes that involve stuffing tomatoes with any type of filling.
The addition of salt that draws out the water will prevent the filling from becoming soggy and will make the preparation more appetizing and tasty!
In a bowl, put the breadcrumbs, finely chopped garlic, very fine parsley, extra virgin olive oil, mixing everything well.
Add also the slightly beaten medium eggs and pour the mixture into the tomatoes. Season with salt and pepper.
Place the umbrian stuffed tomatoes in the baking tray where I added a little extra virgin olive oil and a little tomato sauce if you like….
Now just bake in a preheated oven at 392°F for about 10/15 minutes. Quick and tasty, enjoy your meal with the recipe of umbrian stuffed tomatoes!
