- 8.8 oz cannellini beans
- 7 oz black cabbage
- 7 oz potato (diced)
- 1 teaspoon tomato paste (I use Mutti)
- 2 cups vegetable broth (2 or 3 cups)
- 2 tablespoons soffritto with carrot, celery, onion
- as needed Extra virgin olive oil
- as needed toasted and bruschetta bread (optional but recommended)

Preparation of SOUP WITH BLACK CABBAGE CANNELLINI BEANS AND POTATOES
In a saucepan, place the soffritto with a little extra virgin olive oil and gently stew the vegetables. Meanwhile, drain the cannellini beans from their preserving water, rinse them under running water, and add them to the soffritto.
Take the black cabbage and after washing it, cut it into pieces and add it to the rest.
Now just add the peeled and washed potato, diced, and the tomato paste.
Now let the soup with black cabbage cannellini beans and potatoes simmer slowly for about an hour and a half, adding the broth gradually if the preparation tends to dry out too much.
Almost at the end of cooking, after adjusting the salt, toast the slices of bread, rub them with garlic, and… enjoy this simple, rustic but truly comforting soup… Enjoy your meal with this delicious brothy comfort food with black cabbage cannellini beans and potatoes!
