Stuffed potatoes with speck

Ingredients for STUFFED POTATOES WITH SPECK

  • 6 medium potatoes (preferably oval-shaped)
  • 3.2 oz speck in strips
  • 3.5 oz provola cheese (also smoked)
  • 1.8 oz Parmigiano Reggiano cheese (grated)
  • A few sprigs rosemary
  • as needed Butter
  • as needed Salt and pepper

Preparation for STUFFED POTATOES WITH SPECK

  • Boil the potatoes starting from cold salted water for about 20 minutes: they should be tender but not mushy (test with a wooden skewer).

  • Once warm, peel them and cut in half, hollowing them out in the center.

    Crush the pulp and add speck, diced provola, grated cheese, and a few chopped rosemary sprigs.

  • Season with salt and pepper and fill the potato cavities with this mixture. Add small dollops of butter and bake the stuffed potatoes with speck in a preheated oven at 390°F for about 15 minutes or according to your oven’s characteristics.

  • Serve them hot at the table and enjoy this flavorful side dish of potatoes!

Tips and Notes

The potatoes should not be stored in the refrigerator but in a dry place, preferably in a jute sack or a crate covered with newspaper. To prevent them from sprouting and producing solanine, which can cause digestive issues and headaches, store them in the dark or with apples!
