Today, a simple recipe always with lots of vegetables that are on my table for lunch and dinner in the summer, a preparation that accompanied by stracciatella as you see from the photo was my main dish at noon!
For me, grilled vegetable skewers include bell peppers, spring onions, zucchini, pumpkin, but you can also add eggplants, tomatoes, and potatoes!
This SIDE DISH if not too seasoned is light and can accompany both fish and meat mains and is also great at room temperature to take on a summer picnic or to the beach!

Ingredients RECIPE GRILLED VEGETABLE SKEWERS
- to taste zucchini
- to taste bell peppers
- to taste pumpkin
- to taste spring onions
- to taste Extra virgin olive oil
- to taste balsamic vinegar
- to taste parsley
- to taste thyme
- to taste dried chili pepper
- to taste salt and pepper

Preparation RECIPE GRILLED VEGETABLE SKEWERS
Wash and remove the inedible parts of the vegetables and slice the zucchini, cut the bell peppers into small strips, cut the pumpkin into small slices, and keep the spring onion whole, removing only the stem.
Assemble the skewers with the washed and cut vegetables and light the fire, placing the grill to heat up.
Make a sauce with olive oil, vinegar, salt, pepper, and herbs.
With this vinaigrette, brush the vegetable skewers, place them on the grill, and start cooking.
Cook them on all sides, brushing them with the sauce during cooking, and if you prefer, place the skewers in a baking dish and proceed to bake, still basting them with the aromatic oily sauce. Enjoy your grilled vegetable skewers!
