The easy ricotta meatballs in sauce can be a great appetizer or a tasty second course!
These very tender balls of ricotta and bread and aromatic herbs I baked to avoid too much fat and then let them soak in the tomato sauce scented with fresh basil.

Ingredients RICOTTA MEATBALLS IN SAUCE
- 17.5 oz cow ricotta
- 6.35 oz stale bread (soaked and squeezed)
- 23.7 cups Tomato purée
- 2 cloves garlic
- 1 bunch basil
- 2 tbsps grated grana cheese (2 or 3 tablespoons)
- 1 egg
- to taste extra virgin olive oil
- to taste breadcrumbs (if needed optional)
- to taste salt and pepper

FOR THE PREPARATION OF THE RICOTTA MEATBALLS IN SAUCE RECIPE
In a bowl, mix ricotta with soaked and squeezed bread, the egg, chopped basil, and the grana cheese. Season with salt and pepper.
If necessary, add breadcrumbs to have a firm mixture with which we will form chubby meatballs!
Line the oven tray with parchment paper and place the ricotta meatballs on top, adding a little olive oil and rolling them around the tray to ensure they are evenly seasoned.
Bake in a preheated oven at 375°F for about 15 minutes so that the tender, easy, and quick meatballs brown perfectly.
In the meantime, put some extra virgin olive oil in a pan, along with the garlic, and as soon as it is browned, remove it and pour in the tomato purée, lowering the heat to a minimum.
Also break up some basil leaves and add them to the tomato sauce, season with salt and pepper, and continue cooking for about ten minutes.
Now take the meatballs cooked in the oven and add them to the sauce, continuing cooking for another 10/15 minutes.
Once cooked, these bites of ricotta in sauce serve your guests by also placing some basil leaves before serving at the table.
