I almost never make tarts even though they are delicious, and today I thought I’d make up for it by preparing the soft tart 5 layers with an abundant filling of cherry jam.
The cake is really exquisite and perfect for breakfast, snack, and any time of the day… beware, it’s addictive!!!
I used a small mold of 7 inches (18 cm) but it’s tall and suitable for 6/8 people… with normal appetite, ha ha!
If you want a larger tart, you will clearly make fewer layers using these doses or adjust the proportions, change everything, and adapt the ingredient amounts to your mold… and if the soft tart 5 layers becomes too golden during baking, cover it with a sheet of aluminum foil to finish baking.

Ingredients SOFT TART 5 LAYERS RECIPE
- 1 3/4 cups Flour
- 1 medium egg
- 1 egg yolk (medium)
- 1/2 cup Sugar
- 5 tbsp Butter
- 1/2 cup Ricotta
- 1 organic lemon zest
- 1 tsp baking powder (level)
- as needed cherry jam

Preparation SOFT TART 5 LAYERS RECIPE
In a bowl mix the butter with the sugar.
Add the grated zest of the organic or untreated lemon.
Now add the ricotta and the egg and the yolk while continuing to mix the ingredients.
Now add the sifted flour with the baking powder.On the countertop, continue to knead with a little flour.
Form a dough ball wrapped in plastic wrap and let it rest in the refrigerator for about 60 minutes.
Line a 7-inch mold with parchment paper and proceed to layer the dough for the soft tart with many layers.
Divide the dough into 5 pieces and roll out 4 pieces with a rolling pin.
Place the first layer of dough then make a layer of jam or your favorite jam, starting from the center and leaving about a 1/2-inch (1 cm) border.
Continue until you run out of shortcrust pastry and decorate the last layer of cherry jam using the remaining pastry for small decorations.
Bake in a preheated oven at 350°F for about 40 minutes or depending on your appliance.
Let it cool, then unmold the soft tart.
I went overboard with the filling but… it’s really good!!!
