PEA AND MINT PESTO

A pesto of peas and mint that is very quick and delicious, an almost super-fast recipe to dress a pasta dish or to serve as a savory mousse for crostini at appetizer time just as I did today.

The ingredients are to be measured as desired to have a pesto more or less thick depending on the intended use and instead of adding only extra virgin olive oil, we can divide the liquid by also using tap water for a cream, a lighter and less caloric pesto.
MSo let’s go to the kitchen for this very appetizing preparation…

INGREDIENTS RECIPE PEA AND MINT PESTO

  • 5.3 oz peas
  • 2 tablespoons Parmesan cheese (grated)
  • 1 tablespoon ricotta
  • 1 slice leek
  • to taste pea cooking water
  • to taste Extra virgin olive oil
  • 10 leaves mint
  • to taste salt and pepper

PREPARATION RECIPE PEA AND MINT PESTO

  • Clean the peas by shelling them from the green pod.

    Boil in salted boiling water the peas and 1-2 slices of leek being careful to remove the outer sheath.

    Once cooked, drain the food and place it in the blender or mixer bowl.

  • Activate the blades intermittently adding the grated Parmesan cheese, the ricotta, the washed and dried mint leaves, and little by little, some of the pea and leek cooking water.

    Blend everything together and season with extra virgin olive oil, salt, and pepper.

  • Adjust the consistency of the PESTO WITH peas and mint depending on whether it is used for crostini or to dress pasta, making it more or less liquid or compact.

  • It’s a quick pesto because the vegetables are boiled in a few minutes and very pleasant because it has a tasty but not too strong flavor…
