Ingredients RECIPE ONION SOUP WITH VIN SANTO
- 7 red onions
- 4 tablespoons white wine vinegar
- 1 cup vin santo
- 1 tablespoon brown sugar (heaps)
- 3 tablespoons extra virgin olive oil
- 3 leaves bay leaves
- to taste whole peppercorns
- to taste salt

Preparation RECIPE ONION SOUP WITH VIN SANTO
Peel and slice the red onions. Place them in a bowl with water and white wine vinegar.
Drain them well and then place them in a saucepan with extra virgin olive oil, 6/7 peppercorns, and 4/5 juniper berries.
Cook over moderate heat for 5/6 minutes.
Add the brown sugar and bay leaves.
Now add the cup of vin santo and increase the heat to let it evaporate.
Salt the onion soup with vin santo and continue cooking over low heat until the onion slices are tender.
Serve immediately as a side dish or create your own recipe! Enjoy the onion soup with vin santo!

Tips and Notes
The red onion is generally the one with the most delicate and gentle taste because it is rich in sugars; golden or brown onions are the most versatile and are very suitable for cooking and frying, while white ones are often the most pungent and sharpest.
