Almond Pastries

Aren’t almonds delicious? Today I prepared almond pastries, exquisite treats that can be stored and are typical of Sicily but also of other regions overlooking the Mediterranean.

Almonds like other NUTS are rich in vitamins and minerals and unfortunately are highly caloric so you need to be careful especially if for various reasons your diet is especially attentive to fats and calories.

ALMOND PASTRIES

Almond Pastries

Ingredients for ALMOND PASTRIES

  • 7 oz blanched almonds
  • 7 oz sugar
  • 1.75 oz egg whites
  • 1 teaspoon vanilla essence
  • to taste candied cherries
  • to taste pine nuts

  • Chopper

Preparation for Almond Pastries

  • Chop the almonds with sugar in the mixer until you have a fine powder like flour.

    Add now the egg white and vanilla essence.

  • The dough should be firm enough.

    Put it in a piping bag and on a baking sheet form the pastries.

  • Honestly, I made balls between the palms of my hands without using the pastry bag, but as always do what is most convenient for you!

    Place a candied cherry or some pine nuts in each almond pastry.

  • Leave the almond pastries to rest for at least 3/4 hours. Bake at 356°F (180°C) for 8/10 minutes just until the almond pastries are golden.

    Let them cool completely then… enjoy the almond pastries!
