Carnival time so it’s time for fried foods, not just sweet but also savory with these fried savory calzones filled with mozzarella, sun-dried tomatoes in oil and a hint of anchovy also in oil! I used ready-made pizza dough for ease and speed and alas we finished them in no time at all, goodness!!! Well, we will start the diet in about a month, okay??? FRIED SAVORY CALZONES

Ingredients FRIED SAVORY CALZONES
- 1.5 lbs ready pizza dough
- 5.3 oz mozzarella (block type)
- 10 filets Anchovies in oil
- 5.3 oz Sun-dried tomatoes in oil
- to taste oregano
- to taste salt and pepper
- to taste seed oil (preferably peanut oil)

Preparation FRIED SAVORY CALZONES
First, chop the mozzarella with the sun-dried tomatoes and anchovies in oil.
Season the mixture with two pinches of dried oregano, adjusting the salt and pepper (be careful with the anchovies, haha).
Roll out the ready and leavened pizza dough into a rectangle approximately 16 x 16 inches.
Divide it into as many circles or squares as you prefer and put a bit of filling in each calzone, then seal it well by pressing the edges.
Proceed to fry all the calzones in peanut oil THE OIL WITH THE HIGHEST SMOKE POINT, which therefore withstands this type of cooking better.
Drain them on kitchen paper and quickly bring them to the table!!! Enjoy your meal with the fried savory calzones!

In my kitchen, fried foods are quite rare because I often try to use other cooking methods, but clearly, from time to time, a little fried treat or savory bite is allowed, and among the savory here are:
salicornia or sea asparagus fritters,
zucchini flower and mint fritters,
cauliflower fritters with buckwheat,
green bean bundles and more!
