A quick idea for the recipe of the panettone cake with a delicious taste that you can prepare a bit in advance and I’m sure the whole family will love it! I shamelessly copied the idea from the fantastic site by Luca Perego, a very young and talented pastry chef! The filling is made of cream cheese and mascarpone cheese, creamy and delicious, the lightly toasted almond slices in the pan give that crunchy note that pairs wonderfully with the creaminess and softness of the panettone cake so…prepare it for the holidays and you’ll taste the goodness!!!!

PANETTONE CAKE

Ingredients
- 1 panettone
- 300 g Mascarpone
- 250 g creamy spreadable cheese
- 130 g powdered sugar
- 1.5 cups heavy cream
- 220 g sliced almonds
- as needed red berries (currants and raspberries for me)
- as needed mint (I liked the green eh eh)
Preparation
In a bowl, beat the mascarpone with the sugar using electric whisks.
Then add the cream cheese and continue beating the mixture to get a frothy and creamy mass.
In a clean bowl and using electric whisks, semi-whip the cream.Then add it to the mascarpone, sugar, and cream cheese mixture: you need to obtain a thick and dense cream.
Slice the panettone into 3 layers: I did 1 1/4 inches in height (I kept the remaining part with the dome for breakfasts and snacks).
Fill each layer with the cheese frosting and reassemble the panettone finishing with more cheese cream.
Cover the entire panettone with the frosting and the sliced almonds toasted for a few seconds in a pan over high heat.
Add sprigs of currants and raspberries or whatever you like most to taste… Enjoy your meal and MANY BEST WISHES TO YOU ALL with the panettone cake recipe!!
