Baked Sablée Potatoes

BAKED SABLÉE POTATOES

Baked Sablée Potatoes

Ingredients

  • 8 medium potatoes (yellow-fleshed)
  • 2 cloves garlic
  • to taste rosemary
  • to taste breadcrumbs

Preparation

  • Wash the potatoes well and cut them into chunks without peeling them.
    Then put them in a bowl with cold water and let them rest for about half an hour.

  • Drain the potatoes and blanch them for a few minutes (4/5) in salted boiling water.
    Take them out, dry them well, and let them dry thoroughly on a paper towel or a clean cloth.

  • In a baking dish, place the unpeeled garlic cloves.
    Add the potato chunks and season them generously with olive oil, salt, and pepper, mixing them well.

  • Add the rosemary sprigs and needles and then bake at 375°F (190°C) for about 35/40 minutes.
    Stir them during cooking to brown evenly.

  • A few minutes before the end of cooking, sprinkle them with breadcrumbs, turning and mixing them well.

  • Serve them hot and well-seasoned and enjoy with the baked sablée potatoes!!
