The cinnamon is a spice that is very popular during this period because many sweets and pastries have fragrant doughs with this powder or sticks depending on the use.
Cinnamon is also mentioned in the Bible and was used by the Egyptians as a product for embalming, and also by the Greek and Roman worlds. It has a rather pungent aroma with a strong peppery note and is used in pastry making as a flavoring for creams, doughs, and more.

Cinnamon is also attributed with particular properties such as delaying the progression of Parkinson’s disease, as reported by researchers at Rush University Medical Center; however, be careful with the continuous and unmoderated use of ground cinnamon as it contains a particular caustic substance that could cause serious problems in the respiratory system.
In my kitchen today, I prepared these cookies to offer at the end of a meal or to gift in beautiful personalized packaging: the cinnamon stars!

CINNAMON STARS
- Difficulty: Very easy
- Cost: Very economical
- Preparation time: 15 Minutes
- Portions: About 50 stars

Ingredients
- 7 oz Almond flour
- 5.6 oz Flour
- 3.5 oz Powdered sugar (+ 150 for the icing)
- 2.1 oz Granulated sugar
- 2 Egg whites (+ 1 for the icing)
- 1 tbsp Ground cinnamon
Tools
- Baking trays
Preparation
Mix the almond flour, all-purpose flour, granulated sugar, powdered sugar and cinnamon.
Add 2 egg whites and mix to obtain a fairly firm dough.
Roll it out with a rolling pin to a thickness of about 0.4 inches.
With the star-shaped cookie cutter cut out many star shapes, which you will place on a baking sheet lined with parchment paper.
Bake in a preheated oven at 300°F for about 8-10 minutes or depending on your oven’s characteristics.
While they cool, prepare the royal icing.
Beat the egg white until stiff and add the powdered sugar gradually for a fluid icing.
Brush the icing over the cinnamon stars and let them rest on a wire rack with parchment paper so they solidify completely.
