The small gnocchi with peppers and ricotta is a very tasty dish and easy to make without special tools or skills.
It could also be quite quick if you don’t have trouble digesting this vegetable, while if you’re like me, it’s always better to remove the skin of the peppers, so before making this sauce, I roasted the peppers in the oven to grill them and then remove the skin.
If instead you’re lucky and can digest anything, just clean them from seeds and internal filaments, cut them into strips and cook them with a little oil in a non-stick pan.
Don’t forget to add a little cooking water during the creaming of the small gnocchi with peppers and ricotta if they dry out too much in the pan, but follow me in the kitchen to prepare the small gnocchi with peppers and ricotta!

Ingredients for SMALL GNOCCHI WITH PEPPERS AND RICOTTA
- 2 Red peppers
- 7 oz cow's milk ricotta
- 2.2 lbs ready-made potato gnocchi
- 1/2 ladle pasta cooking water
- to taste Grana Padano (grated)
- to taste Salt
- to taste Extra virgin olive oil

Preparation for SMALL GNOCCHI WITH PEPPERS AND RICOTTA
Wash and cut the peppers in half. Remove seeds and filaments and place them in a baking tray lined with parchment paper until they are tender and well-cooked.
At a temperature of 392°F, it will take about 25/30 minutes.
Remove the outer skin and place them in the mixer with the ricotta.
Season with salt and add a little extra virgin olive oil to make the sauce smooth.
Cook the potato gnocchi normally (my recipe here) in boiling water, and as they rise to the surface, drain them carefully and place them in a pan with the already warm sauce.
Add a small ladle of cooking water if needed and toss them in the pan with the ricotta and pepper sauce.
Adjust salt.
Also add the Grana if you like and serve the small gnocchi with peppers and ricotta at the table!
