Baked Carrots

I went to Faenza for errands the other day; unfortunately, there wasn’t a market, but I took a walk in Piazza delle Erbe and bought some fantastic vegetables, including carrots that finally had their green tops still attached!

As a silly food blogger, I told myself that as soon as I got home, I would have to make a recipe to capture those bouncy, green tops! My sister Annamaria had suggested making carrots with milk, but her puzzled face made me change my mind to a simple and tasty* baked carrots one of the most basic things ever!!!!
I just sprinkled the carrots with a nice mix of sage and rosemary and baked them with a splash of olive oil…delicious!!! *If I say so, who doesn’t really like carrots…trust me!!!

Baked Carrots
  • Difficulty: Very Easy

  • Preparation time: 5 Minutes

Ingredients BAKED CARROTS RECIPE

  • 7 carrots
  • to taste rosemary
  • to taste sage
  • to taste Extra virgin olive oil
  • to taste salt

Preparation BAKED CARROTS RECIPE

  • Remove the green tops(if any…) from the carrots, then wash and peel them.

  • Cut them in half, then again in half.

    Place them on a baking tray lined with parchment paper.

  • Sprinkle the baked carrots with the chopped herbs and add a bit of extra virgin olive oil.

  • Bake in a medium oven (I almost 390°F) and let them cook until almost charred, to my taste for the necessary time.

    Season with salt and serve the baked carrots!

Tips and Notes

Baked carrots are very tasty, and if you want to make them even more delicious, serve them with a reduction of balsamic vinegar of Modena which pairs excellently!!!
