Rings with Radicchio today, shamelessly copying a recipe I often eat at a restaurant in my hometown Granarolo Faentino, in the province of Ravenna. Mr. Bucci’s restaurant, La Madia, is in the town center (and easy to find) and has many delicious first courses on the menu, among many other dishes.
The rings with radicchio including onions are strictly handmade (and you can tell) and are made with only water and flour LIKE THE STROZZAPRETI!
My sisters and I are crazy about them and they are definitely our favorite dish! At first, I thought making these rings was demanding, but then I got the hang of it by making little rolls like for gnocchi, and as they got thinner, I wrapped one end around my index finger and detached the ring… in the end, I was almost like a machine, haha!
I really think the dish is truly worth it and if you want the original version, go to Bucci and you’ll be able to taste many other tasty dishes. Sorry, haha, but… can someone help me make more??????

RINGS WITH RADICCHIO

Ingredients for RINGS WITH RADICCHIO RECIPE
- 1/2 onion
- 1/2 radicchio (I use Chioggia)
- 1 oz oz bacon
- 1/2 cup Milk (or cooking cream)
- 1 1/2 cups cups Flour
- 1/3 cup cups hot water
- to taste salt and pepper
- to taste Grana Padano (grated)

Preparation of Rings with Radicchio Recipe
Mix the flour on the pastry board or in a bowl, calculating 100 grams of flour and 40/45 ml of water per person to knead.
Make a dough ball and let it rest wrapped in food plastic wrap for about 20 minutes. Then make little rolls like you would for gnocchi and … patiently make the rings.
For the sauce thinly slice the onion and stew it in a pan with a little olive oil and a crushed clove of garlic (which you will then remove).
Add the bacon strips and let them brown.
Now add the washed and sliced radicchio.
Continue cooking for a few minutes, gently stewing the radicchio over low heat.
Then add a little milk and let it thicken for a few minutes.
Cook the pasta as usual in salted boiling water and when the rings float, let them cook, always keeping them al dente.
Drain them and pour them into the pan with the sauce, tossing the water and flour pasta, adding also grated Grana Padano.
Plate the dish and enjoy your rings with radicchio!
