Banana and Cocoa Loaf Cake

I’m not a big fan of banana cakes; you’ll find few, I’d say very few, on the blog. But this banana and cocoa loaf cake is super soft and has fruit both inside and on the surface of the cake.

Clearly the thin slices that coat the top become very colored during baking, so if you prefer, put all the quantity inside the loaf cake, making sure to arrange them evenly and maybe lowering the oven temperature by 10/20°F, because the batter will be heavier and it will take more minutes for perfect cooking.

P.S. AN EXTRA KITCHEN TIP If you want super shiny leather shoes, just rub them with the inside of banana peels and then wipe with a soft cloth!!

Ingredients for BANANA AND COCOA LOAF CAKE RECIPE

  • 3 cups bananas
  • 1.5 cups flour (+ extra for the pan)
  • 1 cup sugar
  • 1/2 cup butter (+ extra for the pan)
  • 3/4 cup unsweetened cocoa powder
  • 5 eggs
  • 3 tbsps milk
  • 1 packet baking powder

Preparation of Banana and Cocoa Loaf Cake Recipe

  • Separate the egg whites from the yolks and whip the latter with the sugar until you have a foamy mixture with doubled volume.

  • Add the softened butter in pieces and continue mixing.

    Now add the sifted flour and unsweetened cocoa with the baking powder.

    Alternate these powders with the milk to have a more malleable and fluid batter.

  • Beat the reserved egg whites until stiff and gently fold them into the batter.

    Use a soft spatula and incorporate them with upward movements to avoid deflating them.

  • Butter a loaf cake pan (approximately 11 x 4 inches), flour it, and pour in about half of the batter.

    Peel the bananas, slice them thinly, and place about 2/3 of them into the poured batter.

  • Add the other part of the batter and arrange the remaining banana slices on top. Preheat the oven to 320°/340°F and bake for about 40/50 minutes.

  • Check the baking with a toothpick and when it comes out clean (it also depends on your oven), turn it off and let it cool.

  • Unmold and cool the loaf cake completely on a wire rack. Soft and delicate, enjoy the recipe of the banana and cocoa loaf cake!
