At Esselunga today I found some excellent Italia grapes at a good price and decided to make grapes in syrup with a recipe I read in a magazine.

Confit the fruit is a good method to preserve it, and there are many varieties you can use for this fairly easy technique. In this recipe I show you there is no final sterilization, but if you prefer, you can do it, and I’ll leave you this article to review the 10 fundamental rules for correct preservation.
TheItalia grape is a very old table grape (it has been in Italy since 1911) and is still very appreciated for its juicy and crunchy pulp and muscat aroma.

It is a grape that keeps very well, matures later, and is marketed until the end of December. The main producer in our country is the Apulia region (which gives 74% of the production) and the Sicily region.

Grapes in Syrup

Ingredients for GRAPES IN SYRUP delicious preserve

  • 2.2 lbs Italia grape (€2.48 per kg Esselunga BO)
  • 1 1/2 cups sugar
  • 1 glass white wine
  • 2 cinnamon sticks (2/3 STICKS AS DESIRED)

  • Skewers
  • Small Pan

FOR THE PREPARATION OF GRAPES IN SYRUP RECIPE

  • Cut the grape berries leaving a piece of stem attached. Wash the berries carefully, blotting them with absorbent paper to dry them.

  • With a wooden skewer, prick them and place them in the chosen jars. In a small pan, put the sugar with the white wine and cinnamon and melt it all to make the syrup.

  • Let it simmer for a few minutes then pour it slowly into the jars covering the Italia grapes.

    Seal tightly and let rest in a cool place away from drafts and light sources

  • It is advisable to consume the grapes in syrup after about 3 months of rest. Enjoy your grapes in syrup!

Tips and notes

Confit the fruit is very simple; the important thing is to use intact and firm fruit. If you want to prepare grapes in syrup without alcohol, consider that to make the syrup, the sugar should be half the weight of the water (2:1 ratio), adding untreated lemon peel and a little juice if desired.
