Gratinated Zucchini Sticks

Super easy to make and delicious, the gratinated zucchini sticks baked in the oven are one of those recipes you could make and eat (especially) every day, ha ha!!

My breadcrumb coating is made with breadcrumbs and grated Grana cheese with a touch of sweet paprika, but it’s just an idea because if you prefer you can add a chopped mix of Herbes de Provence or some chili, oregano, fine almond crumbs, and who knows what else!
Prepared and baked this way, the gratinated zucchini sticks remain soft in the center but crunchy on the outside and are much healthier and more digestible!

INGREDIENTS FOR GRATINATED ZUCCHINI STICKS RECIPE

  • 5 dark zucchini
  • 2/3 cup breadcrumbs
  • 2/3 cup grated Grana cheese
  • as needed scamorza cheese
  • as needed fine salt
  • as needed basil
  • as needed parsley
  • as needed extra virgin olive oil

PREPARATION FOR GRATINATED ZUCCHINI STICKS RECIPE

  • Wash and trim the zucchini at both ends.
    I recommended dark zucchini because they are more compact with less water, so they should stay firmer when cooked, but… feel free to experiment yourself, eh?!

  • Cut them into sticks, preferably of the same size. In a bowl, mix the breadcrumbs with the grated Grana cheese and add enough grated scamorza cheese.

    Pierce each slice with a toothpick. Then pass them into flour, beaten egg, and the breadcrumbs, Grana, and scamorza mix.

  • Line a baking tray with parchment paper and arrange the zucchini sticks in a single layer if possible. Drizzle a little olive oil and the chopped aromatic herbs over them, then bake at 375°F for about 20 minutes.

  • Turn off the oven, salt, and if desired, pepper, then serve immediately the gratinated zucchini sticks at the table!
