Creamy Gnocchi with Speck and Shrimp

Pure delight today with this dish of creamy gnocchi with speck and shrimp in a delicate and very pleasant saffron cream! I really like these dishes once called “surf and turf,” a definition that would now melancholically sadden any food critic, but sometimes my old age shows and… Oh well, back to the dish of creamy gnocchi with speck and shrimp you can, if you prefer, use prawns as shellfish instead of shrimp because they are quite similar, and for the cream, I used light cream with a reduced fat content. A sprinkle of parsley and off to the table!!!

Creamy Gnocchi with Speck and Shrimp

Ingredients CREAMY GNOCCHI WITH SPECK AND SHRIMP

  • 1.3 lbs potato gnocchi
  • 20 shrimp tails (or prawns)
  • 0.85 cups light cream (I use Chef)
  • 2 tablespoons brandy
  • 1 clove garlic in skin
  • 2.5 oz speck cut into strips
  • 1 tablespoon extra virgin olive oil
  • to taste parsley

Preparation CREAMY GNOCCHI WITH SPECK AND SHRIMP

  • In a pan, put a little oil and sauté the garlic and speck strips. Once they are colored, add the cleaned shrimp or prawns, therefore without shell and without the intestinal vein.

  • Remove the garlic.

    Sauté the SHELLFISH for two minutes and then add the brandy, allowing the alcohol to evaporate.

  • Add the light cream in which you have carefully dissolved the saffron. Season with salt and pepper.

  • Mix the sauce well and let it rest.

    In salted boiling water, cook the fresh potato gnocchi.

  • When they float to the surface, drain them but keep a ladle of cooking water.

    Pour the creamy gnocchi with speck and shrimp into the pan with the sauce, adding as much hot water as needed to make the dish creamy and fluid.

  • Stir thoroughly, add a chopped parsley, and serve immediately at the table. Enjoy your meal with creamy gnocchi with speck and shrimp!
