Potatoes are a much-loved side dish in my home; my son could eat a ton of them every day, especially when baked with some cloves of garlic and a generous chop of fresh rosemary.
I also like them a lot, and I often prepare simple parsley potatoes, perhaps a mundane side dish, but so appetizing.

Ingredients for PARSLEY POTATOES RECIPE
- 4 Potatoes
- 1 clove of garlic
- 1 bunch parsley
- to taste Extra virgin olive oil
- to taste salt
- to taste pepper
- 4 drops balsamic vinegar (optional)

Preparation for PARSLEY POTATOES RECIPE
Wash the potatoes with their skin on, then place them in a casserole with cold water.
Place it on the flame and cook until a skewer can pierce through the potato.
Meanwhile, finely chop the clove of garlic together with the bunch of fresh parsley.
Once cooked, drain them and pour them into a bowl.
Remove the skin and cut them into chunks once they are warm.
Place them in a bowl and season them with the freshly made chop, extra virgin olive oil, salt, and pepper.
Personally, I always add a dash of balsamic or white wine vinegar to my dressings because it gives a more intense flavor to the preparation.
Now it’s time to serve this easy and delicious side dish: parsley potatoes!

If you want spicy parsley potatoes, add a pinch of fresh chili: as always, you are free to add or remove to make a recipe your own! They are a simple and traditional side dish suitable for accompanying both meat and fish dishes, and they are really very appetizing. In summer, they are exquisite cold, while in the autumn-winter season, if served warm, they are inviting and extremely tasty.
Potatoes are often criticized in weight-loss diets but in reality, they are a food that provides a good amount of carbohydrates and have a very high satiating power.
