RECIPE SOUP WITH PASTA AND POTATOES
In Bologna, the weather is quite variable: almost every day threatens rain, and the first cold has arrived.
The autumn that is approaching is the perfect season to put aside quick and cold first courses in the kitchen to enjoy soups and stews, preparations to be served warm and slightly brothy, making them excellent comfort food.
Today I have prepared the recipe for a soup with pasta and potatoes enriched with bacon and a nice mince of fresh rosemary that adds a strong aromatic note that I personally love very much.
It’s a simple and tasty dish that replaces the more classic brothy first course like vegetable and legume minestrone… Needless to say, even my beloved and picky teenager loved it a lot, so I invite you to follow me to prepare the soup with pasta and potatoes of the day….

Ingredients RECIPE SOUP WITH PASTA AND POTATOES
- 10.5 oz Potatoes
- 1 Fresh spring onion
- 2.8 oz Bacon (slab)
- 2.8 oz ditalini
- 1 tomato
- qt vegetable broth
- 2 sprigs rosemary
- as needed extra virgin olive oil
- as needed salt
- as needed pepper

Preparation RECIPE SOUP WITH PASTA AND POTATOES
Blanch the tomato in boiling water after cutting a cross on one side.
Once warm, remove the skin and the internal seeds and cut the pulp into strips or cubes and set it aside.
Sauté the chopped spring onion and bacon in a saucepan with a little extra virgin olive oil.
Add the peeled, washed, and cubed potatoes for quicker cooking.
Add the tomato, season with salt and pepper, and continue cooking by gradually adding the necessary amount of boiling vegetable broth.
After about 10/15 minutes, add the pasta, stirring the preparation
Bring to a boil and turn off the heat.
Add a nice mince of rosemary and serve hot or warm at the table.
