I’m not a big fan of coconut or rather I really enjoy eating it in fresh chunks that I often buy at Esselunga, but for example, I could never and I repeat, never eat a Bounty, the classic coconut bar covered in chocolate. The soft coconut cake, however, has a pleasant taste, maybe softened by the yogurt and with the butter-free batter, I found it very enjoyable.
This coconut flavored preparation is good even after 2/3 days if kept well covered under glass. If you want it almost as fresh as just made, heat it for a few seconds in the microwave but let’s go to the kitchen to prepare the recipe of the soft coconut cake without butter!!

Ingredients RECIPE SOFT COCONUT CAKE without butter
- 1 1/4 cups All-purpose flour
- 1 1/4 cups Coconut flour
- 3 Eggs
- 1 cup Sugar
- 1 container Coconut yogurt (or plain 4.4 oz)
- 1/2 cup Vegetable oil
- 1 packet Baking powder
- as needed Milk (if necessary)
- 3 tablespoons Hazelnut cream (Nutella)
- as needed Shredded coconut
- as needed Coconut cubes

Preparation RECIPE SOFT COCONUT CAKE without butter
Now add the powders (baking powder, all-purpose flour, and coconut flour) to the mixture, stirring from bottom to top to avoid deflating the mixture.
If the mixture is too dense, add a little milk and mix again.
Pour the mixture into a greased and floured pan (or lined with parchment paper) and bake in a preheated oven at 338°F/356°F.
Bake for about 40°F or depending on the characteristics of your oven.
Let it cool, then remove from the pan and unmold the soft coconut cake.
For the final decoration, sprinkle shredded coconut over the freshly made cake
Put 2/3 tablespoons of hazelnut cream or Nutella in a piping bag and draw lines over the cake sprinkled with shredded coconut.
Finally, place the soft coconut cubes on top.
