I read the recipe of chiaki chiuka Pantesco dish in Sale&Pepe and promised myself to make it in the summer because it is full of vegetables, it is a delicious dish even cold, and since it is very hot here, it is ideal!
I then did some research on the web and found many other recipes that vary slightly in the amount of vegetables which remain constant.
For the ciaki ciuka Pantesco dish you need eggplants, zucchini, potatoes, tomatoes, capers, breadcrumbs, almonds, basil and good oil!
It is a delicious dish perfect as a side dish, to dress pasta, to stuff a brisée shell: in short, it is very tasty and excellent in many variations.
In some ways, it is a French ratatouille or a Lucanian ciambotta and it is a dish that will force you (at least it happened to me) to eat a lot of bread with it! The name comes from the Arabic words chak chouka which means to mix randomly.
The chiaki chuka from the island of Pantelleria can be cooked only in a pan or in combination with a pan and oven, exactly as I did.

Ingredients RECIPE CIAKI CIUKA PANTESCO DISH
- 2 Potatoes
- 1 eggplant
- 1 onion
- 2 zucchini
- 4 tomatoes
- 3 tablespoons toasted chopped almonds
- 2 tablespoons breadcrumbs
- 1 tablespoon capers (desalted)
- 2 pinches oregano
- 5 leaves basil
- to taste Extra virgin olive oil
- to taste Fine salt

Preparation RECIPE CIAKI CIUKA PANTESCO DISH
Cut all the vegetables into not too small pieces and slice the onion. In a large (very large) pan, put a little oil and when it is hot, brown the sliced onion.
Rinse under running water the capers or leave them to soak in a cup of water while you continue the preparation.
Season all the vegetables with salt and pepper.
Add a little water and over moderate heat continue cooking, shaking the pan to prevent the vegetables from sticking.
After about 20 minutes, add the desalted capers, oregano, and basil.
Pour the ciaki ciuka into a baking dish.
Mix the mixture well and add the almonds and sprinkle with breadcrumbs.
Bake in a preheated oven at about 392°F for another 15/20 minutes or according to the characteristics of your oven.
Once cooked, serve the ciaki ciuka Pantesco dish, adding a drizzle of olive oil to each plate.
I liked it a lot: the addition of the capers gives a remarkable boost to the taste, making it very appetizing and the crunchy toasted almonds then….
In short, try it and you’ll taste how good the ciaki ciuka Pantesco dish is, a dish good hot, cold, and warm! Enjoy this tasty recipe full of vegetables and flavor!
