Today I prepared, cooked, photographed, and ate the stewed giant beans called gigantes in Greek cuisine, and it takes me back to the appetizers that were prepared in the restaurant where I worked many years ago.
This recipe is a very tasty and simple preparation that you can use as an appetizer or as a side dish, and it’s very easy to make.
I tried to include all the aromas that I used back then, including bay leaves, parsley, and dill, and I added some juicy cherry tomatoes that released a great flavor when cooked!

STEWED GIANT BEANS

Ingredients for STEWED GIANT BEANS
- 16.2 oz cooked Spanish white beans (weight drained)
- 1 white onion
- 2 cloves garlic
- 14.1 oz cherry tomatoes
- to taste parsley
- to taste dill
- 2 leaves bay leaves
- to taste salt
- to taste pepper
- to taste extra virgin olive oil

Preparation for STEWED GIANT BEANS
Clean the onion and slice it thinly. In a large pan, add the extra virgin olive oil, and when it’s hot, add the garlic and sliced onion.
Sauté for 5 minutes, then add the washed cherry tomatoes cut into quarters. Also add the bay leaves and the aromatic mix.
Mix well and let everything stew for 10/15 minutes.
Now add the drained Spanish white beans and rinse them quickly under running water.
Season with salt and pepper and continue cooking with the lid on for about 20/25 minutes.
The preparation tends to dry out, so it is essential for the success of the dish to check the cooking and add water if necessary to complete the cooking.
