The Crepes Suzette is a typical French dessert, or rather Monegasque, with a controversial origin. In simple terms, it is a sweet crepe flavored with a thick sauce made with sugar, butter, orange juice, and zest, often flambéed with Grand Marnier liqueur.
These Crepes Suzette are very easy to make and are so delicious. If you want them even more indulgent, serve them with a scoop of ice cream. The Crepes Suzette is a dessert that quickly solves the after-dinner dilemma, and I’m sure your friends will love it too…
For me, it’s also a recipe that you can adapt to personal taste by using less orange juice or more grated zest… in short, personal taste rules as in so many preparations!

Preparation for CREPES SUZETTE
For the batter, beat the eggs with the sugar in a bowl, then add the flour and mix it all with the milk.
Mix well (I confess I do everything in the mixer…) to obtain a smooth and homogeneous batter.
Melt the butter in the microwave or in a double boiler and add it to the batter.
Cover everything well and let it rest for about 30 minutes.
After the time has passed, take the batter, add the chosen liqueur, and in a small non-stick pan (7 inches)* lightly buttered, make the crepes, stacking them on top of each other until the batter is finished.
For the sauce, in another pan, melt the butter, adding sugar, the juice of the oranges, and almost all the grated zest, adjusting to your personal taste.
Add a little liqueur, and as soon as it thickens, add a crepe, let it absorb the flavors, then fold it into a fan shape twice and place it on the serving plate.
Continue until all the Crepes Suzette are done, and serve them immediately at the table!
Easy, delicious, and so good, enjoy your Crepes Suzette!
