Fried Eggs with Sausage and Potatoes

A rustic dish that you can also make with leftover boiled potatoes today with fried eggs with sausage and potatoes! The fried egg is a quick and tasty dish that can become a very rich main dish and with a little bread to dip in the runny yolk is truly amazing. For perfect cooking, the edges of the fried egg must be a bit crisp and, of course, the yolk should not be set but nice and runny.

If you want a fried egg even tastier, instead of cooking it with oil or butter, you can use the fattier part of bacon…

Ingredients RECIPE FRIED EGGS WITH SAUSAGE AND POTATOES

  • 4 Eggs
  • 4 cups Potatoes
  • 6 oz Sausage
  • 1 Onion
  • to taste Extra virgin olive oil
  • to taste Salt
  • to taste Pepper

Preparation RECIPE FRIED EGGS WITH SAUSAGE AND POTATOES

  • Peel and cut the potatoes into pieces. Boil them in salted water for about 15 minutes, they should be just tender.

  • Chop the onion and sauté it in a little extra virgin olive oil in a preheated skillet. Then add the crumbled sausage and brown it well, mixing the mixture.

  • Add the boiled potato chunks and without stirring them, let them brown to form a crust on the sides.

  • Turn off and keep warm. In a non-stick pan, pour a little oil and fry the eggs, trying to keep them separate from each other.

  • Compose the plates with the mixed potato and sausage mixture and place a fried egg on each.

    Season with salt and pepper and serve this rustic-flavored dish, the fried eggs with sausage and potatoes!

Tips and Notes

Regarding EGGS to identify fresh eggs from those… less fresh, put water in a bowl with salt. Now immerse the egg; if it remains at the bottom horizontally, the egg is fresh, while if it stands vertically or floats, it’s “old,” so it’s better not to consume it.

Fill a bowl with water and salt then immerse the egg. If the egg stays at the bottom horizontally, it means it’s fresh; if it stands vertically, it’s less fresh; even worse if it rises to the surface, which means it’s old: in this case, don’t use it!
