Wafer and Caramel Semifreddo

In the magazine Alice, prepared by the pastry chef Patrizia Forlin, I saw and now publish on the blog this recipe for a delicious wafer and caramel semifreddo, a fresh and very pleasant dessert with caramel that I personally love a lot even though I use it very little because it’s frighteningly high in calories, and as always, my scale screams….

This recipe is simple and the result is also aesthetically that of a semifreddo beautiful to present even for an important party, and the taste is very very pleasant!

The times are short except for the preparation of the caramel* which is long but you can do it even the day before and still it is not a preparation that disturbs you too much: just put the condensed milk in a pot full of water on the stove and just occasionally check that it has not evaporated and the job is done.

The caramel and thus the sugar cooking is a technique widely used in pastry, and the caramel obtained is divided into light or blonde caramel and dark caramel, and the phenomenon that causes sugar to brown is caramelization.

Another particular type of caramelization is the famous Maillard reaction, a set of particular phenomena that occur as a result of the interaction of sugars and proteins during cooking and with a temperature ranging from 284° to 356° F.

From the color of bread to steaks and fries, it is this reaction that gives food that typical brown color and well-cooked taste, but be careful not to burn everything.

Some foods like poultry may be low in sugars, so wine or lemon or a little honey is added, while common granulated sugar is not suitable.

Ingredients RECIPE Wafer and Caramel Semifreddo

  • 1 vanilla wafer (package)
  • 1 cocoa wafer (package)
  • 10.6 oz Mascarpone
  • 1.3 cups Fresh liquid cream
  • 4.2 oz sliced almonds
  • 1 jar sweetened condensed milk (about 397 grams)

Preparation RECIPE Wafer and Caramel Semifreddo

  • To make the caramel recipe, place the jar of condensed milk in a saucepan, cover with cold water and put on the stove.

    When the water starts boiling, reduce the heat and count about 3 hours.

    Turn off the heat and let it cool completely.

  • Whip the cream with the mascarpone. 

    Add almost all the condensed milk (keep aside the amount for the final decoration.

    Mix well to combine everything.

  • Now add 8 cocoa wafers and 3.5 oz of almonds.

    Line a loaf pan (for me 10 x 4.75 inches) with cling film.

  • Place the vanilla wafers on the bottom.

    Cover them with part of the creamy mixture of cream and mascarpone.

  • Now make a second layer of wafers and the remaining cream.

    Now put in the refrigerator for a couple of hours (or overnight).

  • Unmold the wafer and caramel semifreddo and decorate with the wafer cut in half and arranged as in my photo above.

    Decorate with caramel and sliced almonds.
