Cold Pasta with Grilled Chicken

In Bologna, it’s hard to breathe due to the heat, and the humidity is sky-high: it’s recommended, if possible, to stay indoors with few clothes on and have cold water and drinks at hand, and that’s exactly what I’ll do!!

Today, after a hearty breakfast (and I should lose weight ha ha) at Pino’s downstairs, I’ve decided to prepare a simple recipe for lunch using chicken cooked with a simple cooking method like grilled that was cooked last night, and here’s a perfect dish for the heat that promises to be scorching today!

The addition of pickled vegetables gives a special taste to everything, a deliciously fresh summer dish, but follow me as we prepare the cold pasta with grilled chicken!

Ingredients

  • 10.5 oz wheels
  • 10.5 oz pickled vegetables (drained)
  • 10.5 oz chicken breast (grilled or roasted)
  • to taste grana cheese (or raspadura)
  • to taste extra virgin olive oil
  • to taste Fine salt

Preparation of COLD PASTA WITH GRILLED CHICKEN

  • Boil the pasta wheels in salted boiling water.

    In a bowl, place the grilled or roasted chicken breast cut into strips.

  • Then add the pickled vegetables well drained from the preservation liquid.

  • Once the pasta is cooked, drain it al dente and cool it under running water for a few moments.

  • Drain it again and pour it into the bowl with the pickled vegetables and the grilled and sliced chicken.

    Mix the cold pasta with grilled chicken well and add extra virgin olive oil.

Tips and notes

In summer, cold pasta is a dish that adapts to many occasions because it is tasty, can be made by adding many ingredients, can be prepared in advance because the longer it rests, the more the flavors and tastes of the various ingredients are enhanced, and it is perfect for the beach and for picnics or walks outside.

In this recipe, you can also add some aromatic herbs like a nice parsley chop which goes perfectly, and you could also dress the recipe of cold pasta with grilled chicken with a sauce by adding a couple of tablespoons of mayonnaise to the classic dressing with extra virgin olive oil and salt, a more caloric choice but certainly delicious!
