Princess Sissi Cake or Schlagobers gugelhupf, here is the recipe for a VERY SOFT dessert dedicated to the Empress of Austria Sissi and perfect to enjoy with a good coffee during a relaxing break!
It’s a very light cake with whipped cream (schlagobers) in the batter and is delicate with a slight lemon scent.
Princess Sissi, wife of Emperor Franz Joseph, is well-known not just for her beauty but for the fairy tale her life tells, albeit perhaps idealized and not corresponding to reality.
Perhaps older readers like me will remember the beautiful movie starring the beautiful and ill-fated actress Romy Schneider.

Ingredients for PRINCESS SISSI CAKE recipe
- 2 cups Flour
- 1 cup Sugar
- 1 cup heavy whipping cream (to be whipped)
- 4 large eggs
- 1 tbsp baking powder
- 1 untreated lemon
- as needed Powdered sugar
- butter and flour for the mold

9-inch mold

Preparation of Princess Sissi Cake Recipe
Beat the egg yolks with the sugar and the grated lemon peel.
The mixture should become frothy and very pale.
Mix the flour with the baking powder and add it by sifting it into the egg and sugar mixture, alternating with the whipped cream.
Carefully incorporate the ingredients to obtain a fluid and well-mixed batter.
Lastly, add the egg whites whipped to stiff peaks.
The final mixture is quite fluid without being too runny.
Butter and flour a 9-inch mold (I used a 8-inch, 4-inch high mold).
Bake at 340°F for about 45 minutes: as always, do the toothpick test.
Let cool and remove from the mold.
Turn out and sprinkle with powdered sugar before serving the recipe of the Princess Sissi Cake!
