Here is a no-bake dessert today and this quick no-bake fresh fruit cake is a simple and fast preparation — fantastic for the warm season but also great when we have little time and still want a rich, tasty dessert or an afternoon treat!
You can use for the base cocoa cookies or plain ones; for the filling not only a mascarpone-based cream but also a pastry cream or anything you prefer.
For the fruit you can use all your creativity to artfully arrange it on your quick no-bake fresh fruit cake!
No-bake cakes are the best and quickest way to have a delicious dessert without turning on the oven, so perfect for the warm season that is coming to our country.
For the base you can choose almost any type of cookie on the market and for the filling you can use cream cheese, mascarpone, whipped cream, condensed milk, thick Greek yogurt, maybe adding chocolate chips, pieces of fruit and more.
Some recipes require the addition of gelatin as a thickener, others that are kept in the freezer only need the minimum time for the preparation to adapt to the external environment so it is ready to be enjoyed!

- 9 oz cocoa cookies, crushed
- 7 tbsp butter (melted)
- 1 banana
- 3 kiwi
- 8 strawberries
- 9 oz mascarpone
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- 2 tbsp tap water

Preparation RECIPE Quick No-Bake Fresh Fruit Cake
Crush the cookies finely and add the melted butter and a couple of tablespoons of water.
Pour the mixture into the pan (I previously lined the base with parchment paper) and press it down well using a spoon.
Put the pan in the refrigerator for at least 30 minutes.
For the filling soften the mascarpone a little by stirring it with a spoon. Now add the whipped cream and the powdered sugar.
Mix until you have a smooth, homogeneous cream.
Keep it in the fridge until you’re ready to fill the cake.
Carefully remove the cookie base from the pan and cover it with the mascarpone and whipped cream filling.
Return it to the refrigerator and proceed with the fresh fruit topping.
Wash and dry the chosen fruit. Cut it into pieces.
Take the quick no-bake fresh fruit cake out of the fridge and arrange all the fresh fruit on top as you like.
