Here’s a no-bake dessert today, and this quick no-bake fresh fruit cake is a simple and quick preparation fantastic for the warm season, but also great when we have little time and want a rich and delicious dessert for a snack or after a meal!
You can use cocoa cookies or not for the base, for the cream not only based on mascarpone but also a pastry cream or another of your choice.
For the fruit, then, you can use all your creativity to artistically arrange it on your quick no-bake fresh fruit cake!
Cold cakes that do not require baking in the oven are the best and fastest way to have a delicious dessert without having to turn on the oven, so perfect for the warm season coming to our country.
For the base, you can range through almost all types of cookies available, and for the cream you can use cream cheese, mascarpone, whipped cream, condensed milk, thick Greek yogurt, maybe also adding chocolate chips, fruit pieces, and more.
Some require the addition of gelatin as a thickener, while others stored maybe in the freezer just need the minimum time to adjust….to the outside environment to be ready to be enjoyed!

Ingredients for QUICK No-Bake Fresh Fruit Cake Recipe
- 9 oz cocoa cookies
- 7 tbsps Butter
- 1 banana
- 3 kiwifruit
- 8 strawberries
- 9 oz Mascarpone
- 1 cup Fresh liquid cream
- 3 tbsps Powdered sugar
- 2 tbsps running water

Preparation of QUICK No-Bake Fresh Fruit Cake Recipe
Perfectly crumble the cookies and mix them with the melted butter and a couple of tablespoons of water.
Pour the mixture into the cake pan (I previously lined the base with parchment paper) and press it well using a spoon.
Place the pan in the refrigerator for at least 30 minutes.
For the filling cream soften the mascarpone a little with a spoon. Now add the whipped fresh cream and the powdered sugar.
Mix to obtain a homogeneous and smooth mixture.
Leave it in the fridge until it’s time to use it to fill the cake.
Carefully remove the cookie base of the cake and cover it with the mascarpone and whipped cream.
Put it in the refrigerator and proceed with the fresh fruit topping.
Wash and dry the chosen fruit. Cut it into pieces.
Take the quick no-bake fresh fruit cake from the refrigerator and artistically arrange all the fresh fruit on top
