Advice and notes
Nowadays, in almost all supermarkets in the fresh products aisle, we find all or almost all bases for preparing savory and sweet pies such as shortcrust pastry, puff pastry, and recently even phyllo dough.
Some of these recipes are on the blog along with many other basic doughs you will find HERE.
Today, for convenience, I used the ready-made pizza base, but if you have time, pizza should be prepared with care and diligence following some rules and paying close attention to the ingredients and the leavening because the slower it is, the more the dough adds air, and the pizza will be airy and soft and digestible.
Leavening is the process whereby the volume of the dough increases thanks to the fermentation activity given by the yeast, which produces carbon dioxide trapped in the gluten structure..
