Ingredients for Cod Salad

  • 1.76 lbs desalted cod
  • 16 green olives
  • 1 clove garlic
  • 1 bunch parsley
  • 1 lemon
  • 3 tbsps extra virgin olive oil

Preparation of Cod Salad

For this recipe, I used already desalted cod. Alternatively, you can use salted cod. In this case, you need to soak it in plenty of cold water for 24-48 hours, changing the water every 8-12 hours. This step is essential for achieving a balanced and delicate flavor.

  • Boil the cod in a pot with plenty of boiling water for ten minutes. Then, drain it and let it cool slightly.

    Remove the skin from the cod and divide it into pieces. Then, remove any bones with tweezers.

    Transfer the pieces to a baking dish and season with extra virgin olive oil, lemon juice, the clove cut in half (or into pieces if you prefer), and freshly chopped parsley.

    Complete the dish with green olives, both whole and pitted.

    Let the cod salad marinate for about thirty minutes. When ready to serve, mix the ingredients well.
