Ingredients
- 2 1/2 cups Manitoba flour
- 2 1/2 cups all-purpose flour
- 1 1/4 tsp dry yeast
- 1/3 cup sugar
- as needed orange zest
- 2/3 cup milk
- 1 tbsp honey
- 1/2 cup butter
- 1 packet vanillin
- as needed egg (for brushing the surface)
- as needed sugar crystals
How to prepare the star brioche
Start by placing the flour in the stand mixer, along with the yeast and sugar.
Pour in the milk and the rest of the ingredients, then knead well until a compact ball forms.
Transfer to the work surface and knead it by hand, then let it rise in a bowl covered with cling film for about 2 hours.
After the resting time, divide the dough into 6 equal balls, which should be filled as follows: “Slightly open each ball with your hands, add a generous tablespoon of Nutella and then close the ball on itself“.
Proceed by closing all the balls, then place them in a star-shaped mold. The balls should be placed with the seal facing the bottom of the mold. Let rise for another 20 minutes covered.
Brush the surface with beaten egg and decorate with sugar crystals. Bake your star brioche in a preheated oven at 350°F for about 25 minutes, in static mode.
Storage and variations of the star brioche
The brioche can be stored under a cake dome for up to two days. It can be frozen once cooled. The star brioche can be filled with other spreads and various preserves. You can choose to flavor the dough with the grated zest of an organic lemon.
