Viral Orange Cake

Hello friends, today I present to you this delicious viral orange cake that is circulating on the web and that I wanted to make with my knowledge. This cake consists of two discs of orange cake, two layers of diplomat cream, two layers of orange marmalade, and finally a layer of orange cream. I assure you that it is not difficult to make, just organize yourself and prepare some of the bases the day before. Below you will find the recipe..

Ingredients for the Viral Orange Cake

  • 2 eggs
  • 3/8 cup granulated sugar
  • 2 tbsp sunflower oil
  • 3/8 cup orange juice
  • 1 1/4 cups all-purpose flour
  • grated orange zest
  • Half packet baking powder
  • 1 pinch fine salt
  • 1 1/4 cups whole milk
  • 2 egg yolks
  • 3/8 cup granulated sugar
  • 1 tsp vanilla essence
  • 2 1/2 tbsp cornstarch
  • 5/8 cup whipped cream (Fresh or sweetened)
  • 1 cup orange juice
  • 2 tbsp cornstarch
  • 1/4 cup granulated sugar
  • 1 jar orange marmalade

  • 1 Hand whisk
  • 1 Small pot
  • 1 Springform pan

Steps for the Viral Orange Cake

  • In a large bowl, beat the eggs with the sugar, vanilla essence, and grated orange zest for 15 minutes until they become frothy and pale using electric beaters. Gradually add the sunflower oil and orange juice while continuing to beat. Finally, fold in the flour that has been previously sifted with the baking powder and salt, mixing with a spatula for a few minutes until smooth and homogeneous. Butter and flour an 8-inch round pan and pour in the batter. Bake in a preheated static oven at 350°F for 35 minutes, then test with a skewer. Turn off the oven, remove the cake, and let it cool.

  • To prepare the diplomat cream, start with the custard. Pour the milk into a saucepan and heat it over the stove. In a separate bowl, beat the egg yolks with the sugar and vanilla essence using a hand whisk. Add the cornstarch and salt, mixing well. Pour the egg mixture into the milk and bring to a boil, stirring continuously with the whisk to prevent lumps and to thicken completely. Remove from the heat and place plastic wrap in contact with the surface, then let it cool at room temperature for a few hours. Once the cream is cold, whip the fresh cream to stiff peaks in a separate bowl. Add it to the custard in a couple of batches using a spatula. Mix gently to avoid deflating the mixture until smooth and well combined. Place in the fridge to set for an hour.

  • In a small pot, mix the sugar with the cornstarch using a whisk (photo n. 1). Pour in the orange juice and mix thoroughly (photo n. 2-3). Place the pot over the heat and bring to a boil while stirring continuously with the whisk to prevent lumps and thicken (photo n. 4-5). Remove from the heat and let cool.  

  • Cut the orange cake in two and level it. Place the first disc of orange cake on a serving plate and spread a layer of diplomat cream. Place a layer of orange marmalade in the center of the diplomat cream. Proceed with the second layer of diplomat cream, add another layer of marmalade, and finally place the last disc of cake. Refrigerate to set for about 5 hours. Retrieve the cake from the fridge and complete with a layer of orange cream.

STORAGE, TIPS, AND NOTES

The viral orange cake can be stored in the fridge for up to 2 days. Diplomat cream can be replaced with mascarpone and cream cream.
