Hello friends, today I present to you these delicious soak-up cookies with semolina and rice flour that are truly super soakable and fragrant. Grandma’s cookies are always the best, simple and quick to make with ingredients that you always have at home. Today I opted for using rice flour and semolina which make these cookies even more rustic. Below you will find the recipe.

Ingredients for soak-up cookies with semolina and rice flour

  • 1 3/4 cups semolina flour
  • 1/2 cup rice flour
  • 1/4 cup sunflower oil (Or mild extra virgin olive oil or 5 1/2 tablespoons of butter)
  • 1/4 cup milk at room temperature
  • 1/2 cup granulated or brown sugar
  • grated lemon zest
  • 2 tsp baking powder (Or 1 1/4 tsp baking ammonia)
  • 1 egg
  • 1 pinch fine salt
  • granulated sugar for decoration

  • 1 Paddle Attachment

Steps for soak-up cookies with semolina and rice flour

  • To begin making these soak-up cookies with semolina and rice flour, start by mixing all the liquids. You can use a large bowl and knead by hand or use any kitchen robot. I used a stand mixer with a paddle attachment (K). Pour the egg and sugar into the stand mixer bowl and mix for a few minutes at medium speed. Then add the oil, milk, grated lemon peel, and vanilla essence, and mix again for a few minutes. Finally, add the two flours, salt, and baking powder, and mix again until the mixture is completely combined. The dough will be homogeneous and soft.

  • Break off pieces of dough with your hands to form walnut-sized balls, then roll them between your hands to create small logs. Roll them in granulated sugar and place them on a baking sheet lined with parchment paper. Bake in a preheated static oven at 356°F for 20 minutes or until golden brown. Turn off the oven, remove the cookies, and let them cool down.
