Ingredients for Beans of the Dead
- 1.375 cups almond flour or finely ground almonds
- 0.4 cup all-purpose flour
- 1 egg
- 4.5 tbsp soft butter
- 0.75 cup granulated sugar
- to taste grated lemon zest
- to taste ground cinnamon
- 1 pinch fine salt
- vanilla (optional)

Steps for Beans of the Dead
To make the beans of the dead, mix all the ingredients together in a bowl, starting with mixing sugar and almond flour with spices, salt, and zest. Add the soft butter and the egg and mix carefully until a soft and sticky dough forms. Dust the pastry board with some flour and place the dough on it. Create logs and cut into pieces using a knife. Once the shortcrust dough pieces are ready, place them on a baking sheet lined with parchment paper and bake in a preheated static oven at 340°F for 15 minutes. They will flatten and spread during baking. If you like, you can also shape them round. Remove the cookies from the oven and let them cool completely.
